Preparing for Mia's first birthday

In an effort to get back on track with losing weight, I logged into sparkrecipes.com to find some ideas for my grocery list. I had seen an episode of 30 minute meals last week that led me to look into a very high cal and high fat florentine macaroni and cheese so I stumbled onto foodnetwork.com to check out what ingredients I need to make it for Mia's party. I am definetly going to make a version of that without ground chicken meatballs. Either way, this led me to an avocado goat cheese dip that is definetly going to hit the table for the party.

It uses:
3 ripe avocados, diced
2 cloves minced garlic
1/2 tsp ground cumin
1/4 tsp salt
3 Tbsp lime juice
4 oz cream cheese
4 oz goat cheese

Blend it in the food processor and serve with warm pita chips. I believe I will be serving it with slices of baguette instead... we will see. It's definetly not low cal like I was looking for, but I don't need my guests to eat healthily anyway.

Til next time,

Addie

  1. Hi Addie:

I decided to stop by to see how your blog is going. By the way good luck to you on your weight lost. I also wanted to let you know I was at yet another crafting event this past weekend and I met a lady from Memory Keepsakes. I thought you told me you were interested in that company. If you still are, e-mail me and I can connect you with a local rep.
